Greek Yoghurt Chocolate Cupcakes With Chocolate Frosting 🍫

Recipe: makes around 12 cupcakes
Ingredients:
Chocolate Cupcake
1 cup plain greek yoghurt
¼ cup maple syrup
⅓ cup Nothing Naughty Natural Fibre Syrup
¼ cup coconut oil
2 Tbsp milk of your choice
2 eggs
1 Tbsp vanilla extract
1 ½ cup flour
¼ cup cocoa powder
¼ tsp salt
1 tsp baking powder
¼ tsp baking soda
⅓ cup Nothing Naughty Keto Sweetener
1 Tbsp brown sugar
¾ cup chocolate chips (I used sugar-free ones)
Chocolate Frosting
⅓ cup Cocoa Powder
1 ½ cups Nothing Naughty Keto Sweetener
1 ½ tsp vanilla extract
2 Tbsp milk of your choice
½ cup butter (I used nuttelex buttery - vegan butter but normal butter will work fine too)
Note: I added more cocoa powder to the frosting because I like it super chocolatey, so add more/less depending on how chocolatey you like it.
Directions:
Chocolate Cupcake
Preheat the oven to 180 degrees fan bake.
Mix all the wet ingredients together in a bowl. In another bowl, mix all the dry ingredients together except for the chocolate chips. Add both mixes together and mix well. Then, add the chocolate chips and mix.
Spoon the mixture into your cupcake tin (around 1 ½ to 2 tbsp each).
Bake for 15-20 minutes. Test with a skewer; if it comes out clean, then it is ready.
Let it cool for 20-30 minutes before icing.
Chocolate Frosting
Put the butter into a medium-sized bowl and beat with a hand mixer until it becomes creamy (1-2 minutes).
Add the vanilla extract and beat for another 30 seconds.
Sift in the keto sweetener and cocoa powder. Add the milk and beat until well combined (1-2 minutes).
Ice the cupcakes and then enjoy!
